Gambian Mother Siabatou Sanneh Walks Paris Marathon with 40-lb. Water Container on Head to Bring Awareness to Need for Clean Drinking Water in Africa

In the middle of 54,000 runners at last week’s Paris Marathon, Siabatou Sanneh stood out. Carrying a 40-pound (20kg) water container on her head and wearing her race number 64173 on top of a multi-colored traditional dress, Siabatou wanted to make a statement.
It was the first time the mother of four had ever left her country, Gambia, but this didn’t deter her from wanting to raise awareness about the difficulties African women face in accessing clean drinking water. Siabatou was there on the behalf of Water for Africa, a non-profit which builds boreholes in her village.
“I came to Paris to do the marathon to raise awareness and help the African women get clean water for their domestic use – for drinking, cooking, washing and gardening to grow agriculture,” the 43-year-old told IBTimes UK, speaking through a translator.
“In my country, you grow what you eat and you eat what you grow, but you can only do that with sufficient water.”
By walking the marathon with a plastic barrel of water on her head, Siabatou is hoping to send a message to the leaders at the 7th World Water Forum – which runs until April 17th in Daegu-Gyeongbuk, South Korea. Her statement is simple: she does not want to be drinking water from wells any more.
“I want them to help us dig bore holes, a sustainable water source, but not only more holes, I want more sustainable ones too. That’s all we need. I don’t want my children to be collecting water from dirty wells when they are older,” she said.
In Gambia, Water For Africa estimates between 200 and 300 water pumps would be necessary to supply the population and overcome the 40% to 60% of wells or pumping systems that are crumbling.
Siabatou, who lives in the small village of Bullenghat, which has a population of 300, first started collecting water when she was just five-years-old.  “I wake up in the morning, and go and collect water from a well. I have to walk 8km there, and back. I do this three times a day at least.”

Nutrition Director Betti Wiggins Revolutionizes Foods Served in Detroit Public Schools

With a focus on healthier foods and local farms, Betti Wiggins has led Detroit’s kids through a food revolution.

In the past four years, school meals in Detroit have been transformed. Gone are the chicken nuggets and sugary drinks. Now school cafeterias serve fresh fruit and mixed baby green salads, lean meat, low-fat milk, and whole grain breads. Better yet, some even serve produce from school gardens and local farmers.
The change hasn’t occurred overnight. The Detroit Public Schools Office of School Nutrition, which serves breakfast and lunch to more than 55,000 kids in 141 schools, has worked hard to create such a dramatic nutritional turnaround. And much of the credit goes to the office’s executive director, Betti Wiggins.
In 2008, Detroit Public Schools (DPS) was outsourcing its food service program. But the staff union had the foresight to hire Wiggins to propose bringing it back in-house. Her background as chief of nutrition for the District of Columbia and as a food services director in three other states, came in handy, and the district was convinced she was the one to turn things around.
Right off the bat Wiggins did away with the outside food management company, which allowed her to more than double the size of the food budget. (Before Wiggins came on board, DPS was spending 23 percent of its budget on food; it’s now 51 percent). The change in the quality was dramatic.
“One of the first things we did was turn the deep fryers off,” Wiggins says. “There are certain foods I don’t think we should be serving in schools. I don’t serve hot dogs and corn dogs; I think that’s carnival food.”
Next she increased the servings of fresh fruits and vegetables. Once a week the students are introduced to a new raw vegetable. If they don’t like the jicama, sugar snap peas, or asparagus the first time, it doesn’t matter. As long as Wiggins continues to put new food on their plates, the kids will eventually eat them. Since 2009, the students have also been eating brown rice and enjoying Meatless Mondays with hummus, eggs or cheese.

Chicago Doctor Fred Richardson Makes House Calls in Dangerous Neighborhood Because They Need It Most

Remembering where you come from nowadays seems like it’s just a saying. With ambitions of a family, wealth and better health, most of those living in low-income neighborhoods move away and rarely have time to give back. But a Chicago doctor decided to do something different.
Dr. Fred Richardson returned to the neighborhood where he grew up to specifically provide care to those who need it most: his old neighbors.
Dr. Richardson was raised in Englewood, a low-income area on Chicago’s South Side with one of the highest unemployment and crime rates in the Midwest. After finishing medical school, for the past 25 years, Richardson has given back by making house calls in some of the city’s most dangerous neighborhoods so residents can get proper medical support.
Though house calls may seem a little bit old-fashioned in these days of selfies, online appointments and doctors Skyping, Richardson says that sometimes it’s the only way his patients can receive support.
“These old guys can’t get out,” he told the “Today” show, explaining that some of his patients are unable to leave their homes for care. “Medicare will pay for a home visit — actually will reimburse better than [for] an office visit.”
And his patients love the down-to-earth, personable care that sometimes lacks in a big, busy, corporate hospital setting.
“One of the things I enjoy the most about having a doctor like Dr. Fred is that he’s a good listener,” Alberta Bowles, one of his house call patients told the Chicago Tribune. “You can talk to him. He does not doctor4rush you to do anything and he never dismisses anything you say.”
Richardson was the only African American in his medical class, and he received a great measure of negative feedback.
“I was told many times, ‘Your grades aren’t high enough to do this,” Richardson told one class. “They said I would never do it.” However, he proved that he could. That’s why Richardson, who works six days a week, and is on call 24 hours a day, also finds time to empower future generations.  Several nights a week, in his office, he mentors minority medical students who are struggling free of charge. To date he has helped 50 students become successful doctors! His daughter Jessica is one of those doctors.
Giving back isn’t just something that sounds good to Dr. Fred, it’s a way of life.

HEALTH: Beyoncé Launches Vegan Meal Delivery Service

Now we can all eat (vegan) cake by the pound just like Beyoncé! The pop icon has partnered with her trainer Marco Borges to launch a new vegan meal delivery service.
The company is called 22 Days Nutrition, after the belief that it takes 21 days to break a bad habit.
All meals will be 100% plant-based and delivered once a week. All ingredients will be non-GMO, gluten-free, soy-free, dairy-free and organic. What’s more, compared to many other meal delivery services, prices will be affordable, ranging from $9.76 to $16.50 each.
“All you have to do is try. If I can do it, anyone can,” Bey, who went vegan with her husband Jay Z last year, said in a press release.
“We all know the importance and value of eating plant-based foods but often times find ourselves trapped in a series of bad habits that sabotage optimum wellness,” says co-founder Borges. “The Vegan Meal Delivery program makes it easier to reset your habits with healthy and delicious plant-based foods.”

Muhammad Ali Released From Hospital After 3-Week Stay

Boxing icon Muhammad Ali (pictured) was released from a hospital Tuesday night after being admitted nearly three weeks ago with what was presumed to be pneumonia.  Now it is being reported that the champ was being treated for a severe urinary tract infection, according to NBC News.
The 72-year-old, three-time world heavyweight champ also suffers from Parkinson’s disease, a debilitating neurological illness that has practically stilled his voice and slowed his movements for the last 30 years.
Reportedly, Ali is back home with his family and is now looking forward to celebrating his 73rd birthday on January 17.  Ali’s spokesperson, Bob Gunnell told ESPN, “He’s in great spirits and enjoying being back home.” Gunnell said. “He’s back in his daily routine.”
Even though Ali’s public profile has been low over the last few years, he still manages to get out every now and then.  Last September Ali was spotted at an outing where he sat in the bleachers supporting his grandson, Biaggio Ali Walsh, as the latter played football alongside Cordell Broadus, the son of famed rapper, Snoop Dogg.  The two young players with famous bloodlines are reportedly stellar gridiron athletes with scholarship potential.
Meanwhile, according to Gunnell, the Ali family is thankful for the show of love and support for the champ from well-wishers everywhere. “The Ali family greatly appreciates the outpouring of support and continued well wishes.  They also want to thank the team of doctors and nurses for their exceptional care,” he said.

Former Star Center Jason Brown Trades NFL Career for Tractor to Help Feed Needy

LOUISBURG, N.C. – At one point number 60, Jason Brown, was one of the best centers in the NFL. At one point he had a five-year, $37 million contract with the St. Louis Rams.  And at one point he decided it was all meaningless – and just walked away from football.
“My agent told me, ‘You’re making the biggest mistake of your life,'” said Brown. “And I looked right back at him and I said, ‘No I’m not. No I’m not.'”
So what could possibly trump the NFL?

Jason Brown quit football to be a plain, old farmer — even though he’d never farmed a day a in his life.
Asked how he learned to even know what to do, Brown said:
“Get on the Internet. Watch YouTube videos.”
He learned how to farm from YouTube.  Thanks to YouTube and some good advice from other farmers here in Louisburg, N.C., this week Jason finished harvesting his first, a five-acre plot of sweet potatoes.
“When you see them pop up out of the ground, man, it’s the most beautiful thing you could ever see,” said Brown. He said he has never felt more successful.
“Not in man’s standards,” said Brown. “But in God’s eyes.”
But God cares about the NFL, right? There are people praying to him on the field all the time. “Yeah, there’s a lot of people praying out there,” said Brown. “But, when I think about a life of greatness, I think about a life of service.”
See, his plan for this farm, which he calls “First Fruits Farm,” is to donate the first fruits of every harvest to food pantries. Today it’s all five acres–100,000 pounds–of sweet potatoes.  “It’s unusual for a grower to grow a crop just to give away,” said Rebecca Page, who organizes food collection for the needy. “And that’s what Jason has done. And he’s planning to do more next year.”
Brown has 1,000 acres here, which could go a long way toward eliminating hunger in this neck of North Carolina.  “Love is the most wonderful currency that you can give anyone,” said Brown.

Liberian President Ellen Johnson Sirleaf Joins U.S. Ambassador Malac to Dedicate New 25-Bed Field Hospital for Healthcare Workers

Liberian President Ellen Johnson Sirleaf joined U.S. Ambassador Deborah Malac to dedicate a newly constructed 25-bed field hospital to be used solely for the treatment of healthcare workers who may become infected by the Ebola virus disease.

The construction of the field hospital was financed by the U.S. government and implemented jointly by the U.S. military and the Armed Forces of Liberia (AFL).
The dedication of the facility took place in Charlesville, Liberia, near the Roberts International Airport in Margibi County today.
Speaking during the ceremony, President Sirleaf described the United States as a partner which recognizes and responds to the needs of the Liberian people and that the fruit of the partnership reaches out to the people it is meant to benefit.
The Liberian leader praised healthcare workers for their sacrificial services to the country and its people by confronting a disease they knew very little about and expressed happiness that those of them who may be infected can now receive quality care and treatment with a high hope of survival.

Spinach
It may be green and leafy, but spinach is no nutritional wallflower.  This noted muscle builder is a rich source of plant-based omega-3s and folate, which help reduce the risk of heart disease, stroke, and osteoporosis. Bonus: Folate also increases blood flow to the nether regions, helping to protect you against age-related sexual issues. And spinach is packed with lutein, a compound that fights macular degeneration (and may help your sex drive). Aim for 1 cup fresh spinach or 1/2 cup cooked per day.
SUBSTITUTES: Kale, bok choy, romaine lettuce

Various cultures claim yogurt as their own creation, but the 2,000-year-old food’s health benefits are not disputed: Fermentation spawns hundreds of millions of probiotic organisms that serve as reinforcements to the battalions of beneficial bacteria in your body. That helps boost your immune system and helps provide protection against cancer. Not all yogurts are probiotic, though, so make sure the label says “live and active cultures.” Aim for 1 cup of the calcium and protein-rich goop a day.

There are two things you need to know about tomatoes: Red are the best, because they’re packed with more of the antioxidant lycopene, and processed tomatoes are just as potent as fresh ones, because it’s easier for the body to absorb the lycopene. Studies show that a diet rich in lycopene can decrease your risk of bladder, lung, prostate, skin, and stomach cancers, as well as reduce the risk of coronary artery disease.
